Angel Food Cake

Most cake recipes call for butter, milk, and eggs. But angel food cakes don't! I made this delicious recipe from Taste of Home.com. Angel food cakes use only egg whites and have no butter or milk in them. Beware though, you will need a lot of eggs! 
 
I made this delicious cake and topped it with fresh strawberries one night and fresh raspberries the next night. Instead of using whipped cream I used some non fat ice cream made by Breyers that I found at my local Vons store.

Brownie Mix



Brownies, so chocolatey, so moist, so delicious, so loaded with saturated fat and cholesterol. Making a quick batch of brownies with a box mix was always so easy to do! They tasted great and weren't much work to put together. Once I knew I had to change my diet, I was NOT about to give up brownies! At Trader Joe's I found an AWESOME brownie mix called Reduced Guilt Brownie Mix and the best thing is it is fat free!!! All you need to do is add some fat free vanilla yogurt to the packaged mix, throw them in the oven and 25 minutes later you're on your way to a no cholesterol, no fat, delicious treat!


If you do not have a Trader Joe's in your area, this brand is also non-fat! I have tried this brand too and it is also a great substitute for normal brownies.

Cholesterol Free French Toast



French toast is another of my favorite breakfasts. We often eat it for dinner too in our household! So I made this delicious recipe that is cholesterol free! It goes very well with strawberries and maple syrup with a dusting of powdered sugar. Plus it makes the whole house smell WONDERFUL!

My favorite tool to use for french toast is my Grip N Flip, it makes flipping the french toast effortless!










Cholesterol Free French Toast

6 slices fat free whole wheat bread
4 large egg whites
1/2 cup of nonfat milk
1/2 teaspoon pure vanilla extract
3/4 teaspoon ground cinnamon
canola oil

Separate eggs. I use my cute Egg Yolky egg separator, it works great!
In a shallow dish, mix the egg whites, milk, vanilla and cinnamon.
Heat canola oil in a pan.
Dip the bread quickly into the egg mixture, just enough to coat it on each side. Do not let soak or it will make the bread soggy and it will fall apart.
Cook in the heated canola oil until lightly browned on both sides.
Serve with berries, powdered sugar, maple syrup, whatever your heart desires! :)

Strawberry Graham Cracker Dessert

On a recent family outing to the beautiful Avilla Valley Barn, we got our daughters some ice cream for a treat. As we were sitting outside enjoying the surroundings I noticed a few people walking around with stunning Strawberry Shortcake desserts. Beautiful strawberries were piled around a MOUNTAIN of whipped cream. Knowing I should not be anywhere near that stuff I resisted the incredible urge to go on in and order one for myself, after all, I wasn't eating these things every day right? But I knew if I started that habit it would become an every day thing, oh I don't eat chocolate every day on Monday. On Tuesday it would be, Oh I don't eat cream puffs every day and so on. When we got home I was really craving that Strawberry Shortcake. We had bought a big box of fresh strawberries from the barn so I put my thinking cap on and came up with a close second to that devilish dessert!
In my freezer I had a tub of Trader Joe's whipped topping. 
There is no cholesterol in it, but it does have 2g of saturated fat per serving, and that is where I would splurge because a little of this stuff does go a long way. So I sliced some fresh strawberries into a bowl, added about 1 tablespoon of the whipped topping and then crumbled some honey graham crackers also from Trader Joe's on top and woo-hoo I had a strawberry shortcake-like dessert that was delicious and cholesterol free!

Cholesterol Free Pancake Recipe





 Trying to find a regular pancake recipe with no cholesterol or one that is low in saturated fats is not easy! My regular pancake recipe used eggs, whole milk and oil. When I learned that I needed to fix my cholesterol levels I started playing around with the recipe a bit.

The original recipe had 2 eggs and 2 cups whole milk. That’s a lot of saturated fat and cholesterol just in those 2 ingredients.

My first adjustment was the eggs. One large egg yolk alone has 221mg of cholesterol in it, that meant there was 442 mg of cholesterol in just egg yolks! I am trying to keep my daily intake of cholesterol to under 100 mg. Now I knew I wouldn’t be eating the entire batch of pancakes by myself but that is still way too much!

There is no cholesterol in egg whites, so I used my cute and handy egg separator to get the yolks out of the recipe. To make up for the missing yolks I doubled the egg whites, 2 large eggs = 4 large egg whites. I use a lot more eggs now that I don’t eat the yolks, but our new chickens will help out with that issue in a few months!

Now that I had fixed the egg problem I turned to the milk. The obvious solution was to switch to nonfat milk. I wasn’t sure if that would affect the yummy fluffiness of the pancake, so instead of using just milk, I decided to use yogurt and milk combined. It worked really well! The 2 cups of whole milk is now 1 cup of nonfat milk and 1 cup of nonfat vanilla yogurt! Boy does that yogurt make the pancakes so moist and fluffy!

Here is the final recipe for my cholesterol free pancakes :)

 2 and 1/2 cups of flour
¼ cup of sugar
1 tablespoon of aluminum free baking powder
1 teaspoon of salt
4 large egg whites
1 cup of nonfat milk
1 cup of nonfat vanilla yogurt
3 tablespoons of applesauce
3 tablespoons of canola oil

Mix the dry ingredients in a large bowl. In a separate bowl mix all the wet ingredients. Pour them into the dry ingredients, stir until mixed.
Using 1/3 measuring cup, pour batter onto the hot griddle that has been lightly greased with canola oil. Cook until browned on both sides.

Makes 15 to 16 pancakes
